Melbourne, Australia. March 2012. The Palms at Crown welcomes back dance sensation, Burn the Floor to wow audiences with a new generation twist to Ballroom and Latin dancing. A crowd favourite since 1999, Burn the Floor continually evolves the dynamic production to remain fresh and new. The mind-blowing internally renowned production launches Thursday 14 until Saturday 30 June.

Direct from record breaking seasons on the West End and Broadway, Jason Gilkison, the star Director of Burn the Floor is bringing his global Ballroom dancing phenomenon back to Australia. Starring 18 international championship dancers including So you think you can Dance Winner, Robbie Kmentoni and USA So you think you can Dance stars Karen Hauer and Janette Manrara.

‘In all, the very heart of our show remains unchanged, and it is simply defined by the spirit of the dancers and their rebellious nature. It is their energy that helps us create new routines and segments to ensure whether it is the audiences first time or tenth time seeing the show it is always new and vibrant’, says Jason Gilkison.

The on stage performance is so electric it has taken the troupe all over the world, selling over 3.5 million tickets in more than 30 countries across 161 cities. The touring pace and continual development of the show results in the team becoming like a family on the road. Heated creative input, on-road romance and dance fuelled drama brings the team together in an unbreakable connection that transcends the stage.

Producer Harley Medcalf was inspired to create this production over 15 years ago with the original idea of Burn the Floor being born from Elton John’s 50th birthday party in 1997.

‘In the midst of a glamorous costumed evening, the party in full swing, Sir Elton, the ultimate host, introduced 16 young energetic dancers who mesmerized the packed room with a 10 minute dance display’, says Medcalf.

‘The party was so full on, not even an earth quake could stop the action, in the midst of all the fervour, the rich and famous who had seen it all, out came these young dancers. Their performance was so electric and unexpected and it literally blew the room away’, states Medcalf.

The concept has experienced challenges with economic rise and fall and geographical learning curves. The bond between the team meant these obstacles were met head on and success prevailed. ‘It has become a place of fierce commitment, application and kinship for everyone involved’ says Medcalf, who has been at the helm and takes pride in never losing sight of his goal.

Medcalf states, ‘As a company, in just ten years we have created our own history and tradition, through the hard work, experience and absolute passion. This has certainly defined us as people and performers, and given all in the company strength to chase our dream’.

The dancers range in age from 18-30 years of age from all over the globe representing countries including England, Russia, Philippines, Australia, Italy, The United States of America, Peru, Germany, Venezuela and Malaysia.

The back of house is as busy as the stage with 367 costumes and accessories and over 94 pairs of shoes being worn throughout the performance. It is thirsty work with 90 Litres of water consumed at every performance and the dancers rehearse and warm up for 2 hours before every performance. Featured Dances in the show include The Waltz, Cha Cha, Samba, Salsa, Rumba, Foxtrot, Quickstep, Mambo, Tango, Swing, Jive, Lindy Hop, Viennese Waltz and Paso Doble.

Jacques Marcon works alongside his father, Regis, at their triple Michelin-starred restaurant, with its sweeping views of the Valleys of Ardèche and Mont du Velay, one hour’s drive from Lyon. For almost half a century the sixty seat restaurant has run continuously and Jacques Marcon, who was named chef in 2008, has trained both there and in other Michelin-starred kitchens including Hotel Astor, Hotel Vernet and L’Ambroisie.

The eponymously named restaurant, Regis Marcon, is widely regarded as one of the best in France and, inspired by the topography surrounding its location, mushrooms feature famously and deliciously on the menu. Between 40 and 50 different mushrooms are used at any one time and, on a normal day, Jacques and his team are known to use 30 kilos of this wondrous ingredient.

Marcon cites Mother Nature as his biggest inspiration so it will be fascinating to see how the Australian landscape – and the wonderful produce on hand – affects the young chef. At home two of his favourite dishes to cook are a lobster cassoulet with green lentils and a juxtaposed dessert that features a caramel of mushrooms that is both sweet and intense with the flavours of morels.

The ‘Stars of Stars’ is the fourth instalment in Crown’s innovative Michelin Star focused ‘Stars’ series, following on from ‘Stars of Europe’ (2009), ‘Stars of America’ (2010) and 2011’s ‘Stars of Spice’. The other seven guest chefs for 2012 are Italy’s Luisa Valazza, France’s Thierry Marx, Serge Vieira and Stephane Bour, Tokyo’s Jun Yukimura, Hong Kong’s Mok Kit Keung and Belgium’s Sang-Hoon Degeimbre.

JUN YUKIMURA BRINGS HIS STAR TEAM TO CROWN FOR STARS OF STARS - 01 February 2012

Normally only a handful of diners can take a seat at the counter of Tokyo’s tiny but illustrious Yukimura restaurant. From 6 – 11 March, however, Melburnians can dine with the triple Michelin Star chef, Jun Yukimura, when he creates a unique ‘Pop Up’ restaurant at Crown’s award-winning Koko restaurant. This 2012 visit follows on from Yukimura’s immensely popular participation in Crown’s 2011 ‘Stars of Spice’ programme.

Yukimura’s remarkable reputation was forged through 25 years cooking in Kyoto, including a decade spent at the famous Kaiseki restaurant, Wakuden. His own eponymous restaurant, popular with the chefs, politicians, locals and celebrities, is hidden away in Azabu-Jūban, a neighbourhood known as Tokyo’s most expensive upscale residential district.

Trained in the kitchens of gifted chefs rather than within the confines of a cookery school Yukimura ships many of his ingredients in from Kyoto. He says he is “obsessed” with Japanese cuisine and particularly likes to work with Pike Conger Sea Eel – “it takes a high level of skill to cut” – and Hana- sansho, the flower of Sichuan pepper.

As part of his Melbourne Food and Wine Festival activities chef Yukimura will treat diners to an exquisite degustation paired with specially selected sake by a visiting Sake Master from Japan.

Jun Yukimura will also join Sang-Hoon Degeimbre and Luisa Valazza to present the Festival’s Masterclass weekend.

ITALY’S FIRST THREE MICHELIN STAR CHEF RETURNS TO CROWN FOR STARS OF STARS - 01 February 2012

Luisa Valazza, the first Italian woman to win three Michelin stars at her restaurant, Al Sorriso, is one of Crown’s exceptional guests. From 14 to 18 March Valazza will swap her kitchen at the foot of the Alps for the one at Crown’s JJ’s Bar and Grill where she will preside as guest chef-in- residence.

North of Milan, in the Alpine foothills, Al Sorriso is a small restaurant and boutique hotel renowned for its high standards and welcoming atmosphere as overseen by Valazza’s husband, Angelo, who comes from an international restaurant management background.

Valazza grew up in beautiful, cobble-stoned Sorriso, surrounded by majestic mountains and lakes and studied Arts, not cooking, at university. Her first foray into the professional kitchen came when the then chef of Al Sorriso resigned unexpectedly. Armed with cook books and recipes and a love of the local produce and culinary traditions, she went on to become one of the few female chefs in the world to achieve three Michelin stars.

Known for her fresh, delicious and captivating interpretations of regional favourites, Valazza is associated in particular with a certain type of ricotta cheese, her use of violets, berries and nuts from the forest, plus the aromatic herbs that grow wild in the area. Her signature dish is ricotta and wild spinach ravioli; she credits this pasta with making her famous.

Much is made of her love of combining the bounty of the mountains and the sea so it will be fascinating to see how this chef embraces local Australian and international produce for her inspirational seasonal dishes here in Melbourne.

Valazza describes her style as “a combination of Piedmont, Mediterranean and international influences, brought together as a tribute to the mountains where I love to walk”. High-altitude ingredients such as white truffle, Porcini mushrooms and wild herbs are the heroes of her celebrated menus. Luisa Valazza is set to be a hero of the 2012 Melbourne Food and Wine Festival, following on from her success in 2009 as a guest of Crown’s ‘Stars of Europe’ programme.
