Pasta is a major feature of the menu and Piera Pagnoni is Rosetta’s own expert sfoglina - the title given to the women who have mastered this artisan tradition of pasta making and represents a unique specialisation where skills are passed down from one generation to the next. Decades of practice has honed her formidable finesse to twist a sheet of pasta using the lightest of touches to create a perfect, plump tortelloni…and make the whole process look almost easy.
Also at the heart of Rosetta’s fast-paced kitchen is a wood fired oven and char-grill for creating traditional Italian dishes such as suckling pig, roast chicken and wood fired suckling lamb.
The collection of wine at Rosetta is a celebration of what is unique about Italian wine. Such a long gastronomic history has given us the opportunity to explore and gain insights into the various regions and cultures that have developed over the centuries whilst maintaining distinct regional identities.
