A Seven‑Course Storytelling Experience
The seven-course menu moves through vibrant, layered flavours - from a delicate crisp topped with curd and caviar, to charred sourdough enriched with coconut sambal butter. Butter‑poached crab follows, paired with roasted coconut pumpkin and nutty brown‑butter pepitas.
Local wild venison adds earthy depth, contrasted with taro, curry and pickled shallot. A coastal snapper curry with tamarind and a crayfish croquette leads into light finales ending with love cake and Dilmah tea.
