Since childhood, Guillaume Brahimi’s favourite dessert has always been a lemon tart. Meticulously perfected on-site daily by Bistro Guillaume’s pastry chefs, this simple yet always delicious dessert is made with a homemade sweet pastry using almond meal, plain flour and vanilla beans.
The pastry is then weaved into a baking ring and blind baked until it reaches that perfect golden brown colour. A smooth, rich lemon or chocolate custard is then poured into the shell and baked until just set. When serving, we recommend adding a quenelle of crème fraiche to complement the decadent and delicious custard*.
Serves 6–8.
