4 MINS READ

Reinventing the wheel is unnecessary. Reinventing the classics is quite literally a recipe for luxurious dining experiences.

Every culture has several traditional dishes that are made at home and in restaurants. But now, there’s an increasing popularity for fusion and contemporary takes on those classics amongst foodies everywhere.

And the results are spectacular.

Melbourne Multiculturalism

Over half of Melbourne’s residents were born overseas. They come from more than 115 different countries, and almost half of them speak a non-English language at home. All that makes for a truly diverse culture, and a truly epic dining scene.

In the heart of the city, Crown Melbourne embraces that multicultural diversity, and reflects it back at the city with phenomenal global dining experiences.

Crown Meets Culinary Excellence

Crown Melbourne’s chefs don’t just dream up diverse menus. They are diverse. So often, a great chef is one who can explore the world through flavour, texture, and aromas, and that challenge can come much more naturally to those who have explored the world itself.

Our chefs, who now live in Melbourne and call Australia home, draw inspiration from global traditions and reinterpret them using modern techniques and local ingredients. Because they don’t need to reinvent the wheel to make something great, but they can reinvent the classics to add new and exciting twists.

Classics With A Twist

Marmont

Effortlessly cool and uniquely iconic, Marmont is a gem of the Riverwalk. It’s a place where the laid-back Californian spirit meets Melbourne charm.

Head chef Mark Tagnipez is a key ingredient in Marmont’s recipe for cool. His Filipino American heritage shines through as he pulls together a seafood centric, Latin American menu.

Think classic buttermilk fried chicken paired with pickled chilli. Think pretzel, but make it mud crab with gruyere cheese and Old Bay spice blend. Think pork pluma, the classic Spanish dish, but prepared ‘crying tiger’ style.

Marmont is not just the place to be, it’s the place to be for reinvented classics.

Kolkata Cricket Club

Few cuisines do classics quite like Indian. Yet at Kolkata Cricket Club, you can discover your favourite Indian dishes, but with a new and utterly delicious twist.

It’s all thanks to acclaimed Australian-Indian chef Mischa Tropp. Named Gourmet Traveller’s Best New Talent in 2024, and a key part of the restaurant's success in earning a prestigious Chef’s Hat in 2025, Mischa is introducing diners to a new take on Indian cuisine.

The Butter Chicken is arguably the finest in the city. The Mach Posto uses barramundi, and the Mishti Doi dessert showcases the elevated elegance of this popular dish.

Nobu

It’s near impossible to improve on the delicate balance of flavours found amongst traditional Japanese cuisine. But it is possible to add a new mouthwatering twist.

Esteemed chef Nobu Matsuhisa fuses traditional Japanese cuisine with South American flavours at world-renowned restaurant Nobu. The Nobu Short Ribs are prepared with the mild Peruvian chilli pepper Aji Pancs. The Beef Tataki comes with onion salsa and ponzu. The Tofu Mascarpone Miso combines classic ingredients from East and West for a dreamy, elevated dish.

TWR

Take a traditional bar, give it a twist, and you’ve got TWR. Here, it’s the drinks list that’s been reinvented.

The innovative high tea experience at TWR draws inspiration from a variety of cultures. Everything from the flavours to the presentation are influenced by different traditions and are regularly updated with fresh ideas.

Not to mention the chef’s take on desserts. With traditional techniques in mind, this selection of sweets pushes the boundaries of exciting flavour combinations and tastes.

Modern cuisine is defined by its ability to take traditional dishes and find new and interesting ways to reinvent them. At Crown Melbourne, you’re invited to explore the world through the innovative creations where culture and creativity meet cuisine.
