Harvested from the prized Pinctada maxima oyster in the pristine waters of the Kimberley, Paspaley pearl meat is revered for its purity, delicacy and natural sweetness — a true by‑product of Australia’s most celebrated pearling tradition.

This is paired with exceptional caviar from Kaviari, the French maison renowned for its meticulous selection and maturation of the world’s finest roe. Kristal and Oscietra caviar bring salinity, texture and balance, enhancing each dish through refinement rather than excess.

Presented across an à la carte offering and an immersive set menu, pearl meat is explored through Japanese technique — lightly torched with uni, folded into silken chawanmushi, or served in harmony with land and sea. Treasures of the Sea reflects a philosophy of conscious luxury: precision, respect for origin, and timeless refinement.
