VICTOR CHURCHILL
Opening mid 2027, Victor Churchill will unveil a new bar and grill that brings its world class butchery and signature fire driven dining to the heart of the city.
Described by the late Anthony Bourdain as “the most beautiful butcher shop in the world”, Victor Churchill at Crown Melbourne is set to deliver an unforgettable dining experience.

Led by Anthony and Rebecca Puharich, with Monty Koludrovic as Head of Culinary, Victor Churchill will invite guests into a fully immersive restaurant that celebrates meat through intimate dining spaces and a menu driven by provenance and seasonality.
“Victor Churchill has always been about more than just meat – it’s about storytelling, craft, and creating unforgettable moments,” said Anthony Puharich, CEO of Victor Churchill. “We’re thrilled to bring this philosophy to Crown Melbourne, where we can offer guests one of the most distinctive dining experiences in the country. Opening March 2027, Mott 32, one of the world’s most celebrated Chinese restaurants, will make its Australian debut at Crown Melbourne, bringing its acclaimed modern Cantonese dining experience to the heart of the city.
Founded in Hong Kong and recognised by the MICHELIN Guide, Asia’s 50 Best Restaurants and the Tatler Dining Guide, Mott 32 is celebrated for its legendary 42‑day apple‑wood roasted Peking duck, alongside expertly crafted dim sum and signature dishes showcasing premium seafood, wagyu and roast meats, complimented by an impressive drinks list.
The arrival of Mott 32 at Crown marks an exciting new addition to Melbourne’s dining scene.

Global hospitality disruptor Andy Masi is bringing two bold, high end concepts to Crown Melbourne: Amaya Modern Mexican, a vibrant, high energy restaurant celebrating big flavours, and Barbershop Cuts & Cocktails, a hidden cocktail lounge with a rock ’n’ roll attitude.

Opening on the Riverwalk at Crown’s west end, Amaya will showcase sweeping city and river views. Led by Michelin-starred chef, Jason McLeod, the menu will celebrate fresh seafood, fire roasted meats and share style plates, complimented by premium tequila and mezcal cocktails. Opening early 2028.

Barbershop is the twist in the tale: a working barbershop by day, and by night, a hidden door reveals a sleek, secret cocktail lounge. Inside, a modern speakeasy comes to life with moody lighting, rich finishes, and a refined edge. Expect standout whisky cocktails, theatrical serves and a touch of rock ’n’ roll. Opening early 2028.

BELLEVUE BAR & TERRACE
Crown Melbourne’s new riverfront gastropub is on its way — say hello to Bellevue Bar & Terrace, opening November 2026.
Opening directly onto the Riverwalk, Bellevue Bar & Terrace is designed to effortlessly shift with the day, from an easy-going, relaxed daytime spot to catch up over a drink and bite to eat, into a buzzing destination for good times after dark.
Guests can enjoy elevated pub classics, a social laid back atmosphere, complete with big screens showcasing all the must see sporting moments.
With its prime waterfront location and easy-going atmosphere, Bellevue Bar & Terrace is set to become a favourite hangout for locals, diners and sports fans alike.

CROWN LIVE
Entertainment will take centre stage with the transformation of The Palms. Currently under construction, the venue will reopen as Crown LIVE in November 2026, welcoming up to 1,250 guests.
Showcasing luxurious renovations and an impressive balcony designed for pre show socialising, the reimagined theatre will position Crown as a premier destination for international performers, theatre residencies and high energy concerts, elevating Melbourne’s live entertainment scene.
