Tuna Cutting Ceremony at Koko

In July, Koko presents the revered Japanese tradition of the Bluefin Tuna Cutting Ceremony. On 10 and 24 July, the evening will open with the powerful resonance of traditional Japanese Taiko drummers, setting a ceremonial stage before a 50kg+ whole bluefin tuna from Bermagui, New South Wales is expertly broken down by Koko’s Japanese chefs. With practiced precision and speed, the tuna is revealed in its most prized expressions – lean Akami, delicately marbled Chūtoro and the richly indulgent Ōtoro – each cut reflecting centuries of culinary mastery and respect for the ocean.

The ceremony flows into a refined seven-course tasting menu celebrating the depth, texture and versatility of bluefin tuna, complemented by exceptional seasonal Australian produce. For an elevated experience, the Teppanyaki Experience includes an additional tuna steak prepared live, with an optional beverage pairing curated to harmonise with each course.
